Ingredients You'll Need:

2 ½ cups Cake Flour (285g) or 2 ¼ cups All-purpose Flour & ¼ cup cornstarch (sifted together)
2 tsp baking powder
½ tsp baking soda
1 tsp salt
½ cup unsalted butter (room temp)
¼ cup oil
1 ¾ cups granulated sugar
5 large egg whites
⅓ cup sour cream
1 tsp vanilla paste
2 tsp strawberry extract
½ cup whole milk Puree:
1 ½ cups fresh or frozen strawberries
½ cup Champagne or Sparkling Wine
¼ cup orange juice
Zest of 1 large Orange (~2 tbsp)
Instructions:
Begin by preheating your oven to 350°F
Step 1: Make a strawberry mimosa reduction. Puree Strawberries, Champagne, orange juice & zest, put in a sauce pan and heat on medium until reduced by half and thickened. Once reduced, let cool. It will have a jam consistency. You will need ½ cup for cake batter.
Step 2: Weigh out dry ingredients and place in separate bowl, whisk together
Step 3: In a stand mixer with paddle attachment or a hand mixer, beat butter, sugar and oil together until light and fluffy (about 3-4 minutes). Add in egg whites and beat on high for 2 minutes. Add in sour cream, strawberry extract and mix on low until incorporated. Scrape down the sides and bottom of the bowl with a spatula as needed.
Step 4: With mixer on low, add in dry ingredients until just incorporated. Continue to mix on low and pour in ½ cup whole milk.
Step 5: Add in ½ cup of strawberry mimosa puree and mix until just blended. Batter will be thick and fluffy.

Step 6: Liberally coat Bundt pan with Pam Baking Spray. Pour batter into pan and fill until ¾ full.
Step 7: Bake at 350°F for 25-30 minutes or until a toothpick inserted in the center comes out clean. Do not overbake.
Step 8: Remove from the oven and let cool on a cooling rack for 10 minutes before flipping cake over. If you would like your cake extra “boozy” you can poke holes in the bottom before flipping it and add 3-5 tbsp of Champagne right over the top.
Glaze:
3 tbsp Freeze dried strawberries (crushed into a powder)
2 cups Powdered Sugar
2 tbsp Melted Unsalted Butter
2 tbsp Champagne
1 tsp Orange Zest
Instructions: Melt 2 tbsp of unsalted butter, add 2 cups powdered sugar, 2 tbsp Champagne, 3 tbsp freeze dried strawberry powder and 1 tsp orange zest into a bowl. Whisk until thick but pourable consistency. If too thick, add Champagne 1 tbsp at a time, if too thin add more powdered sugar.
Once you are happy with the consistency, pour over your cooled Bundt cake and enjoy!
