Indulge in Sweet Bliss: Limoncello Cheesecake Bundt Cake Recipe

Cake Ingredients:


  • 1 box of Duncan Hines Lemon cake mix

  • 1 pkg Instant Cheesecake pudding mix

  • 1/2 cup all-purpose flour

  • 1/2 cup of canola oil

  • 4 eggs (room temperature)

  • 1/2 cup sour cream

  • 1/2 cup of Limoncello liqueur

  • 1/2 cup Buttermilk

  • 1 Tbsp Cream Cheese Extract

  • Zest of 1 whole lemon


Glaze:

  • 2 Cups Powdered Sugar

  • 2 Tbsp melted unsalted butter

  • 1 Tbsp Lemon Zest

  • 1 Tbsp Lemon Juice

  • 1 tsp cream cheese extract

  • 1 Tbsp heavy cream

  • 2-5 Tbsp Limoncello



Instructions:


  • Preheat your oven to 350°F and generously coat your Bundt pan with Pam Baking Spray.

  • In the bowl of your stand mixer or a large mixing bowl, add dry ingredients first, mix until combined.

  • Next add all wet ingredients except eggs.

  • Add eggs last, one at time, mix until smooth and well combined.

  • Pour the batter into the prepared Bundt cake pan and smooth the top with a spatula. (It will be thick)

  • Bake in the preheated oven for 25-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

  • Allow the cake to cool in the pan for 10 minutes, then carefully invert it onto a wire rack to cool completely.

  • Once cooled, it's time to make the Glaze.

  • Start with melting the butter, then whisk in all ingredients except the Limoncello. Add Limoncello a tablespoon at time until the glaze consistency is pourable.

  • Pour glaze over cake and sprinkle with lemon zest for a vibrant finish.
